Cabbage, Carrot, Apple Slaw

We have been on a major red cabbage kick recently after learning how nutritious it is! We love this simple and healthy recipe for Cabbage, Carrot, Apple Slaw. While you can make this recipe with either green cabbage or red cabbage (sometimes known as purple cabbage), we choose the red cabbage for its higher nutrient profile.

Truth be told, we were forced to go on our red cabbage kick (at first!) With little produce to choose from in the little Patagonian village we’re living in, the only things that seemed to be ripe and fresh were the cabbages. From there, we started experimenting and this slaw has quickly become our go-to. Great for both as a summer and winter side dish!

1 Quarter Head of Red Cabbage (~2 cups, shredded)

2 Medium Carrots (chopped)

1 Medium Green Apple (chopped)

2 Tbsp. Red Wine Vinegar

2 Tbsp. Extra Virgin Olive Oil

1 Tbsp. Lemon Juice

A Dash of Black Pepper


1. Mix the cabbage, carrots, and apple in a large bowl.

2. Drizzle the extra virgin olive oil, red wine vinegar, with a dash of pepper on top and toss well.

3. Add a dash of pepper to taste.

4. Serve chilled!

Serving Size: Roughly 4 servings

Can be refrigerated for several days.
